Carrot cake is a classic of grandmas that goes well for dessert, breakfast and afternoon snack, in other words, whenever you want.

The recipe I’m going to teach here today is my family’s traditional one, which can’t be missed when I meet with my cousins. This carrot cake is very fluffy and delicious, and I always get compliments when I do it to my family or friends.

Carrot Cake Recipe

Ingredients

• 2 medium grated carrots
• 2 eggs
• 2 cups of sugar
• 1 cup of oil
• 2 1/2 cups of wheat flour
• 2 teaspoons baking powder

Directions

• Grease a pan with butter (or margarine) and wheat flour;
• Preheat oven to 180°C;
• In a blender place the grated carots, the eggs, the sugar and the oil;
• Beat for 4 minutes;
• Transfer the liquid mixture to a large bowl and gradually add the flour, mixing gently with a wire whisk until it is homogeneous;
• Add the baking powder and mix until is incorporate;
• Pour into the prepared pan, and put it in a hot oven (180°C) for 45 minutes;

Tips:

• To find out if the cake is ready, stick a toothpick in the dough: if it comes out clean, you can take it out of the oven; otherwise, leave it for a few more minutes, until it’s completely baked;
• You can use a round pan of 24 cm in diameter or rectangular with 30 cm x 20 cm;
• This carrot cake fits perfectly with a chocolate icing.
